Apple and Cinnamon Traybake

This is a brilliant traybake recipe is perfect for that weekend baking treat. It will keep up to 3 weeks in an airtight container if you can keep it around that long!. Ours lasted for about 10 mins out of the oven.



  • 3 ripe bananas
  • 110g BioandMe Apple and Cinnamon Granola plus a handful more for decorating
  • 150g oats
  • 300g oat flour
  • 70g peanut butter or tahini
  • 1 egg or flax egg
  • 1 teaspoon of ground cinnamon plus a pinch more for decorating
  • 2 teaspoons of baking powder
  • 150ml milk of choice
  • 50g yoghurt
  • 1 teaspoon of vanilla extract
  • 1 large or 2 small apples (sliced)


1. Begin by preheating the oven to 180c and lining a square or rectangular baking tin.

2. In a bowl mash the bananas and combine with the peanut butter, egg, milk, yoghurt and vanilla extract.

3. Blend the granola into finer crumbs before adding to the bowl along with the oats, oat flour, cinnamon and baking powder. Combine until everything is mixed together well.

4. Empty the mixture into the baking tin and flatten. Top with sliced apples and sprinkle with a handful of granola.

5. Bake in the oven covered for 15 minutes and then uncovered for another 15 minutes.

6. Allow to cool slightly before removing from the tin, slicing and sprinkling with more cinnamon.
